Banana & Violet Crumble Muffins

  • 100 grams oil
  • 2 eggs
  • 120 grams sour cream
  • 4 ripe bananas
  • 80 grams sugar
  • 350 grams plain flour
  • 1 level teaspoon baking soda
  • 120 grams violet crumbles, broken into peices

Recipe's preparation

    Banana & Violet Crumble Muffins
  1. Pre-Heat oven to 190oC

    2.  Place oil, eggs, sour cream and bananas into mixing bowl and blend 8 sec/speed 7.

    3.  Add sugar, flour and baking soda and combine 10sec/speed 7.

    4.  Add violet crumble pieces and mix 4 sec/speed 4.

    5.  Spoon into oiled muffin tins and bake for 20 mins or until risen in centre and a toothpick comes out clean

    tmrc_emoticons.)delicious muffins although a little sweet for me but my husband and son loved them. I did change it a little bit. I used 3 bananas as that's all I had and I ran out of sour cream so used half sour cream and have plain Greek yoghurt. Next time I make them I may decrease the sugar as the bananas and violet crumbles are so sweet already. It made 17 muffins for me.

    Love  Put fan forced oven on 180. Used crunchies. Excellent!
