- 225 g castor sugar
- 300 g thickened cream, 1 carton
- 2 eggs
- 1 teaspoon vanilla extract
- 50 g Milk
- 300 g Self Raising Flour

Preheat oven to 180°C. Line a muffin tray with cupcake liners.
Place sugar in bowl and mill 10 seconds / speed 10.
Add cream, eggs, vanilla essence. Mix 10 seconds / speed 5.
Add milk and self raising flour. Mix 10 seconds / speed 5.
Divide mixture into cupcake patty cases and bake for 20 minutes in a moderate oven.
Allow to cool.
Top with your favourite icing.
Tip
I have iced these cupcakes with a simple icing. Just 1 cup of icing sugar with enough water to blend. Top with sprinkles.
I also freeze this for the kids lunchbox snack.

Very light, fluffy and yummy - great texture. Didn't have any butter in the house so enjoyed being able to make the recipe with cream. Added some pink food colouring for a little girl's 1st birthday party and they came out just perfectly. Quick and easy - loved it! Thanks so much for sharing - will be making them again!
