Ingredients

Slice

  • 150 grams Butter
  • 150 grams caster sugar
  • 75 grams coconut, dessicated
  • 150 grams Self Raising Flour
  • 3 weet bix
  • 50 grams cocoa powder

Glace Icing

  • 180 grams icing sugar
  • 2 tablespoons water
  • 2 drops pink food colouring
  • 1 tablespoon coconut, dessicated

Recipe's preparation

    Slice
  1. Preheat oven to 180 degrees

  2. Line slice pan or square cake pan with baking paper

  3. Melt butter 3 mins, 60 degrees, speed 2

  4. Add sugar, coconut, SR flour, weetbix and cocoa

  5. Combine for 30 secs, speed 4.

  6. Scrape down sides of jug and repeat for 30 secs, speed 4

  7. Pour into cake pan

  8. Place in oven and cook for 30 mins

  9. Remove from oven and allow to cool before icing

  10. Glace Icing
  11. Add icing sugar, water and food colouring to jug

  12. Combine for 15 secs, speed 3

  13. Ice the slice when cool and sprinkle extra coconut on top

  14. Cut into slices once icing has set

    This is my new favorite recipe. It is actually the same as my mum ued to make when I was a kid minus the thermie of course, mum used to call them chocolate fingers. I had lost mum's recipe & early this year my daughter gave birth to her 2nd daughter & named her Bessie & it was only because the name Bessie stood out that I thought those biscuits sound nice & after I made them I realised it was the recipe or similiar that my mum used to make.
