Ingredients
Pastry
- 40 g raw sugar
- 150 g plain flour
- 100 g Cold Butter, chopped
- 1 egg yolk
- 15 g iced water
Topping
- 45 g Butter
- 100 g honey
- 60 g plain flour
- 50 g brown sugar
- 3 eggs
- 375 g cashew nuts, roasted, salted
- 10 g extra honey, to brush on the top
- murray river sea salt flakes

Preheat oven to 180 degrees and line slice pan / baking tray or individual
tart cases with baking paper.
Add sugar to bowl and mill for 15 seconds on speed 9.
Add flour and butter and mix 10 seconds on speed 5.
Add egg yolk and iced water and mix for 5 seconds on speed 5 or until the
dough comes together.
Turn out onto baking paper. Put a piece of baking paper on top and roll out to the size of your slice pan (approx 20cm x 30cm). Tip baking paper over so
dough falls into pan and press down on the base, and cut off excess from
sides.
Refrigerate for 30 minutes.
Bake in oven for 10 minutes or until browned and then let cool.
Reduce oven tempreature to 160 degrees
Melt butter in bowl on 50 degrees for 2 minutes on speed 2
Add honey and mix for 5 seconds on speed 3
Add flour, sugar and eggs and mix speed 4 for 5 seconds
Add cashews and mix on reverse for 10 seconds speed 2
Pour over base and bake in oven for 35-40 minutes
Brush over remaining honey and sprinkle with sea salt flakes
Cut into wedges and serve with whipped cream or icecream

Delish. I added about 80ml of milk given the previous comment. Nice and moist. Great staple snack.
These were nice, but didnt quite turn out how I expected. The caramel was more like a caramel pudding, when I was expecting something a little more decadent. Taste was great, pastry was beautiful - it did need some time in the fridge after rolling, before i could peel it off the backing paper, otherwise it was too soft and stuck to the paper.
