Ingredients
Soup
- 40 grams olive oil
- 1 red onion, Quartered
- 140 grams Celery, Roughly Chopped
- 2 cloves garlic
- 1 long red chilli, Seeded, Roughly Chopped
- 1 teaspoon ground cumin
- 2 teaspoons sweet paprika
- 30 grams tomato paste
- 1 can Chickpeas
- 65 grams quinoa, Rinsed
- 1 can chopped tomatoes
- 2 tablespoons TMX Veg Stock Paste
- 750 grams water

Add onion, chilli, celery and garlic and chop speed 5 for 3 seconds
Scrape sides
Add oil and cook 4 minutes, 100 degrees, reverse, speed 1
Add spices to the bowl (be careful not to get them on the blades) and cook 1 minute, 100 degrees, reverse, speed 1
Add quinoa, chickpeas, tin tomatoes, tomato paste, veg stock paste and water and cook 25 minutes, 100 degrees, reverse speed 1.
Serve with crusty bread!
Tip
You can use red or white quinoa. When rinsing your Quinoa try lining the steamer basket with a new clean chux cloth or muslin cloth so you do not loose any through the holes.

Great recipe! This was just delicious!
Delicious. Really enjoyed this. I also used zucchini instead of celery as that's what I had in the fridge. And a pinch of chilli powder rather than fresh chilli. I had cooked a big batch of chickpeas so I used 1.5 cups of those instead of a tin of chickpeas.
So tasty, great dish and so easy.
Thank goodness I stumbled across this recipe. It has been a 'go to' for me for months. Ridiculously easy and delicious, it never fails. I add an extra chilli because I love hot, hot food!

This was delicious! I used fresh tomatoes, added a carrot for more vegies and halved the amount of water to make it a thick soup perfect for a cold day!
