Ingredients

  • 130 g Macadamia nuts, raw, unsalted
  • 35 g Coconut sugar
  • 50 g Butter, grass fed, or palm shortening.
  • 50 g molasses
  • 1 free range egg
  • 1/2 tsp baking soda
  • 1/2 tsp Pink Himalayan Salt
  • 15 g Coconut Flour
  • 70 g choc chips, dairy free, naturally sweetened e.g. loving earth coconut milk

Recipe's preparation

  1. Place macadamia nuts in dry TM bowl and mill for 6 secs, speed 8 or until fine flour consistency is reached. Do not over mill. Set aside.


    Place coconut sugar in dry TM bowl. Mill for 20 secs, speed 9 till fine powder is acheived.


    Add butter beat for 15 secs on speed 4.


    Add molasses and egg and mix for 6 secs on speed 5. Scrape down sides of bowl.


    Add milled almonds, baking soda, salt and coconut flour to TM bowl. Mix for 10 secs on speed 4. Scrape down sides of bowl and repeat.


    Add choc chips or chopped chocolate pieces and mix for 10 secs, counter-clockwise operation, speed 2.


    Place spoonfuls onto baking mat or paper with space inbetween. Flatten with a fork.


    Bake for 9-12 minutes or until slightly golden. 


    Cool on mat/baking sheet.


    You can substitute chocolate for cranberries or any other dried fruit (banana chips will give it a great crispy texture).


     

Tip

I'm intolerant to almonds (unfortunately) and have found out recently that if you have a sensitve stomach it is highly possible you will have a problem with almonds.  The true paleo diet doesn't include almonds as the skin has some chemical in it that causes the problem.  Macadamia nuts are a very soft oily nut so you may want to cut back on the butter.  Enjoy!

    Hi there, paleo diet does include almonds but the skins are soaked in water overnight to activate them. This removes the phytic acid and then allow easier digestion.
