dairy and soy free marble cake
- 300 g dairy and soy free margarine, eg nutellex, + extra for greasing
- 370 g plain flour, + extra for dusting
- 200 g raw sugar
- 1 teaspoon vanilla
- 1 pinch salt
- 5 eggs
- 1 tablespoon baking powder
- 70 g rice milk (or preferred milk)
- 30 g Unsweetened Cocoa
- icing sugar, for dusting cake before serving

1.preheat oven to 180degrees c. Grease and flour a bundt cake tin
(approx 22-24cm) and set aside.
2.Place dairy and soy free margarine, plain flour, and 170g sugar, vanilla extract, salt eggs, baking powder and 40g of rice milk into mixing bowl and mix for 40sec/speed 5 with aid of spatula. Transfer half of cake mixture into prepared tin. Leaving remainder in mixing bowl.
3. Add cocoa powder, remaining 30g of sugar and remaining 30g of rice milk into mixing bowl and mix 5sec/speed 5. Scrape down sides of mixing bowl with spatula. Mix a further 5sec/speed5.
4.Layer cocoa cake mixture into bundt cake tin. To create a marble pattern, swirl through both layers with a fork. Bake for 50-60 minutes (180*C) or untill a wooden skewer inserted into the centre of the cake comes out clean. Allow cake to cool in tin for approx 15min before transferring to a serving plate. Dust with icing sugar.
Tip
this recipe is just a variation of the marble cake in the basic TM cookbook, so that it is soy and dairy free , so my daughter can also have it.You could also use oat, or almond milk if you prefer. Also I used less sugar than the original recipe, and only had raw sugar not castor sugar.
