- 230 grams SR flour
- 115 grams Butter
- 115 grams sugar
- 50 grams Currents
- 50 grams sultanas
- 1 egg
- 2 tablespoons Milk

I'm cooking this todayRecipe's preparation
Preheat oven to 160-180oC
Place dry ingredients in TM bowl and mix 2 seconds Speed 6
Add butter and mix 8 seconds Speed 6
Add egg and fruit. Set to closed lid position and combine on Interval speed for 20-40 seconds.
Roll mixture into small balls.
Place on tray lined with baking paper. Bake until light brown (approx. 15 minutes)

These rock cakes are delicious. Nice & crunchy on the outside. I added 1/4 teaspoon of cinnamon & substituted the currants for another 50gms of sultanas as I didn't have any currants. will make these again.
These are super easy and delicious, thanks for posting!
These rock buns are the best. I made 2 batches of these tonight one with just currants as I am not a fan of sultanas cooked, and the second batch I substituted the currants for choc chips.
