Ingredients

Filling

  • 270 g dates
  • 45 g water
  • 30 g lemon juice

Base

  • 125 g Butter
  • 180 g raw sugar
  • 1 egg
  • 30 g golden syrup
  • 1 tsp vanilla essence
  • 150 g wholemeal flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 110 g rolled oats
  • 70 g dessicated coconut

Recipe's preparation

  1. 1. Preheat oven to 180C

    2. Grease and line a 20x30cm sponge roll tin.

    3. Weigh dates and chop 5 seconds/speed 8.

    4. Add water and lemon juice and cook 3 minutes/60C/speed 1.

    5. Set date fillng aside.

    6. Weigh butter and chop 5 seconds/speed 5.

    7. Add sugar and cream butter and sugar together 1 minute/speed 4.

    8. Add egg and golden syrup, mix 30 seconds/speed 4.

    9. Add vanilla, wholemeal flour, baking powder, salt, rolled oats and coconut and mix 20 seconds/reverse/speed 4.

    10. Press half of Base into the prepared sponge roll tin, then spread over the date filling.

    11. Dot small pieces of the remainder of the Base over the date filling and carefully spread over to form a top layer.

    12.  Bake 180C, 25 - 30 minutes until golden brown.
