Ingredients

Oaty ginger crunch: Base

  • 160 g Butter, chopped
  • 150 g self-raising flour
  • 1 heaped tablespoon ground ginger
  • 100 g Soft brown sugar
  • 80 g rolled oats
  • 65 g dessicated coconut
  • dash vanilla extract

Icing

  • 125 g Butter, chopped
  • 1 tbsp ground ginger
  • 215 g icing sugar
  • 2 tablespoons golden syrup
  • 70 g crysyallised ginger

Recipe's preparation

    How to:
  1. Preheat the oven to 180°C, regular oven.
    Grease and line a slice tray.

    1. Melt butter 3-5mins/60°C/sp2. Or melt in the microwave,
    60% power/1 minute.

    2. Add the flour, ginger, sugar, oats, coconut and vanilla, 15secs/sp4

    3. Spread into the prepared tray, pressing down to compact the mixture.

    4. Bake 17 minutes, or until golden.

    5. Remove from the oven and prepare the icing (below). Spread evenly over the prepared warm base.

    6. Cool in the fridge, before cutting into slices to serve.

  3. 1. Chop the ginger 20-30 secs/sp9, or until chopped to your liking.
    Set aside.

    2. Without rinsing the bowl, add the remaining ingredients 10secs/sp4, or until well combined.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
