Ingredients

Dry ingredients

  • 80 grams white rice
  • 115 grams Gf all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp xanthan gum
  • 1/2 tsp salt

Wet ingredients

  • 150 grams sugar
  • 2 tbsp orange zest
  • 1 tbsp orange flesh
  • 4 free range eggs
  • 115 grams cream cheese
  • 1 tsp Vanilla Paste
  • 115 grams unsalted butter

Orange syrup

  • l rind of orange, Remove all white pith and cut into thin strips
  • orange juice, From 1.5 oranges
  • 4 cloves
  • 50 g sugar

Recipe's preparation

    Dry ingredients
  1. Preheat oven to 160°C 

    Prepare cake or loaf tin. 

    Mill rice on sp 9 for 1min.

    Add remaining dry ingredients. Mix on sp 5 for 10 sec to combine. 

    Set aside.

  3. Add zest and sugar. Mill for 10 sec sp 10.

    Add flesh, eggs, cream cheese and vanilla. Mix 10 sec sp 4.5.

    While on sp 3.5 pour melted butter through the lid slowly. (10 sec approx).

    Add dry ingredients. Mix on speed 4.5 for 10 sec. 

    Scrape bowl. Mix on sp 4.5 for 10 sec. 

    Pour into prepared tin.

    Bake on 160° for 15 min. 

    Turn oven down to 150° for a further 35min or until a skewer comes out clean.

    Allow to cool in tin for 15 minutes before serving or add syrup to warm cake. 

     

  4. Optional Orange syrup
  5. In a pot on the stove. Add all syrup ingredients and simmer on low heat until sugar is dissolved. Turn heat to medium to high for 5 mins. Use a pastry brush with water to occasionally brush down the sides of the pot. strain and pour over baked cake. Allow to cool before cutting
