Ingredients

  • 1 lemon, (peel skin with vegetable peeler, be careful not to have too much white pith and save rest of lemon to use juice in recipe)
  • 90 grams pepitas (pumpkin seeds)
  • 2 tsp vanilla extract
  • 130 grams dessicated coconut
  • 60 grams Coconut butter, (I make my own using 250g dessicated coconut - put it in bowl and blend 1 min/37 degrees/speed 8 then scrape down sides and repeat for another 2 minutes. I store this in a jar in my cupboard - sometimes I need to heat in microwave to get it out)
  • 70 grams honey
  • 1 pinch salt
  • 30 grams dessicated coconut, extra to roll balls in

Recipe's preparation

  1. Mill lemon skin and pepitas 10 seconds/speed 9

    Add lemon juice, vanilla, coconut, coconut butter, honey and salt, blend for 10-20 seconds on speed 8

    Roll into bite sized balls and roll in coconut

    Keep in fridge or freeze for school lunchboxes

    These are delicious! I did twirk the recipe a little. Instead of using honey I used rice malt syrup and added about 75 grams of cashews. (LOVE the coconut butter too.)
