Simple Marshmallow Slice - Gluten Free
- 100 g butter (softened and cut into cubes)
- 100 g white sugar
- 1/4 teaspoons baking powder
- 1/4 teaspoons vanilla essence
- 1 egg
- 200 g gluten free flour
- 4-5 tablespoons Jam
- 450 grams marshmallows

- Preheat oven to 170°C. Line bottom and sides of slice tin (20 x 30 cm) with baking paper and set aside.
- Place sugar and butter into mixing bowl and beat 20 sec/speed 5. Scrape down sides of mixing bowl with spatula.
- Add egg, flour, baking powder and salt and mix 20 sec/speed 4.
- Scrape down sides of mixing bowl with spatula and mix 20 sec/speed 4 or until mixture comes together.
- Transfer mixture into prepared slice tin and press down with the back of a spoon. Bake for 10 minutes (170°C) or until golden.
- While slice is still warm, spread with jam. Cover with marshmallow.
- Return to oven and bake for 10 minutes (150°C) or until marshmallow softens.
- Using the back of a spoon, gently press marshmallows down to create an even surface. Leave to cool and then pop in the fridge.
