Ingredients

Whole orange, date, walnut, chia and oat muffins

  • 140 g pitted dates
  • 1 orange, quartered, pips removed
  • 60 g walnuts
  • 100 g Butter
  • 125 g orange juice
  • 100 g sugar
  • 1 egg
  • 150 g self-raising flour
  • 1 tsp baking powder
  • 100 g rolled oats
  • 30 g dessicated coconut
  • tsp bicarbonate of soda
  • 1/2 tsp salt

Recipe's preparation

  1. Preheat oven to 180 degrees C. Lightly spray silicon muffin tin with oil, or line a regular muffin tray with paper cases.
    1) Adddates, orange and walnuts into bowl and chop 5s #8.
    2)Scrape down and add butter, cook 5 mins 37C #1.
    3) Add juice, egg and all other ingredients and mix 25s #2.
    This will still need hand mixing as the butter sticks to the bottom. Stir lightly ensuring the bottom is incorporated. This mix will be quite chunky and dry.
    Put in prepared muffin trays - fill up high as they don't rise much. Bake 15 mins and rest in tray for 5 mins before moving to rack.

Tip

*Sugar is just enough for a touch of sweetness. Add more if you like a sweeter muffin.
Try adding other ingredients you have in the cupboard! Enjoy.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
