Gozney Simple Pizza Dough
- 600 grams water
- 1000 grams flour, Italian 00
- 30 grams salt
- 7 grams dried instant yeast

- Pour 600g water into the bowl.
- Add 7g instant dried yeast.
- Add 500g of flour and mix for 30 seconds
- Add the remaining 500g of flour and mix for 30 seconds.
- Add 30g salt and mix for another 30 seconds
- Knead dough for 10 minutes
- Cover and leave to rest for 10 minutes
- Empty dough on to counter and drag across the counter surface to form tension and create a ball. Place into an oiled bowl and cover with a damp tea towel. Leave to prove for 2 hours.
- Shape dough into 200g balls 30 minutes prior to use and allow to rest once shaped.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
