Ingredients

clarified butter

  • 600 ml single cream, make Thermomix butter
  • 2 sticks cinnamon
  • 6 pods Cardomom
  • 1 tsp Corriander Seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp cummin seeds
  • 1 star anise
  • 1 bit of mace

Recipe's preparation

    Spiced Ghee or clarified butter
  1. Have: make butter ( see every day cookbook) from 600 ml single cream, do not add anything to the butter like olive oil or salt.


    Add the spices.


    Insert Butterfly.


    Put butter and spices into TM bowl. Cook for 30 min. on Varoma temp. Reverse speed 1. Place the simmering basket on top of the lid, with a small jar and lid in the basket, to sterilise while cooking.


    Using a wooden spoon, dicard the foam that has formed on top.


    Pour the defoamed clarified butter through a muslin cloth, inserted into a funnel, which is placed into a warm, clean jar. The bits on the bottom and the spices will stay in the cloth.


    The Ghee looks like sunshine caught into a botlle and your kitchen smells like Christmas.


     

Tip

To clarify the butter means to separate the milk solids and water from the butter until you get a clear substance. Ghee is butter without the lactose and casein so its usually easy to digest for those who have dairy sensitivities. This Ghee can be used to make Hollandaise sauce ( see Every Day Cookbook) or for sauteing on your stove. It is safe to use, as is virgin cold pressed Coconut oil, both having a high smoke point. Your Thermomix has controlled heat and it is safe to use Virgin Cold Pressed Olive oil only in your Thermomix because it heats up to 114' degrees, where as the stove gets much higher temperatures. One can make popcorn on the stove but not in the Thermomix. Because it is so easy to make butter and Ghee in your Thermomix you always have the right oil with high smoke point at hand and thus you take care of your health!
