Ingredients
Bretzel dough
- 2 teaspoons dry yeast
- 400 grams Milk
- 600 grams flour
- 2 teaspoons salt
- 3-4 tablespoons rock salt
Boiling water
- 600 grams water
- 4 tablespoons bicarb soda

Pour milk and yeast in the bowl and program 2 mn / 37° / speed 2.
Add flour and salt and program 3 mn / "Dough mode" .
Let the dough rise until it has doubled its size (approx 30 mn).
Pre-heat oven at 180°C.
Divide dough in 10-12 equal pieces. Shape bretzels (shape long "sausage" (50-60 cm) with fine ends - take ends of the "sausage" and turn them twice before refolding them onto the bigger part of the "sausage").
Boil the water in a big pot and add the bi-carb soda.
Immerse bretzels one by one in the water with a skimmer during 30-60 seconds.
Remove bretzels and put them on an oven tray covered with baking paper. Sprinkle with rock salt and let cool several minutes.
Place in the oven 15 mn / 220°C.
