Chicken Marinade
- 400 g chicken breast, thinly sliced
- 2 cloves garlic
- 1 shallot
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp sesame oil
- 1 tsp Coconut sugar
- 1/2 tsp Chinese five spice powder
- 1/2 lemon, juiced
Quick Pickled Veg
- 1 carrot, small julienned
- 1/2 cucumber, julienned, seeds removed
- 1.2 daikon, julienned (optional)
- 0.1 level teaspoons rice vinegar
- 2 tsp sugar
- 1/2 tsp salt
Bahn Mi Assembly
- 2-3 crusty rolls
- Mayo or Sriracha Mayo
- fresh coriander
- cucumber, Sliced
- fresh red chilli, Optional

- 1. Marinate the Chicken
Add garlic and shallot to Thermomix bowl. ⏱️ Chop 3 sec / Speed 7. Scrape down
Add soy sauce, fish sauce, sesame oil, honey, five-spice, and lime juice. ⏱️ Mix 5 sec / Speed 4
Pour over sliced chicken in a bowl. Mix to coat. Let it marinate 15–30 min (or longer if possible). - 2. Pickle the Veg
In a bowl or jar, mix vinegar, sugar, and salt until dissolved.
Add julienned carrot, cucumber, and daikon. Let sit for at least 15 minutes while chicken cooks. - 3. Cook the Chicken
Add marinated chicken (with marinade) to the Thermomix bowl.
Insert butterfly whisk.
Cook 12–15 min / 100°C / Reverse / Speed 1
Check chicken is cooked through. - 4. Assemble Your Bánh Mì
Lightly toast the rolls.
Spread with mayo or avo.
Add a layer of cooked chicken.
Top with drained pickled veg, fresh cucumber slices, coriander, and optional chilli.
