- 200 grams popping corn kernels
- 100 grams long grain white rice
- 1 teaspoon salt
- 1 teaspoon xanthan gum
- 210 grams water
- 20 grams oil, grape seed or rice bran
- 1 egg

Mill the rice for 1 minute, speed 9. Pour into a bowl and set aside.
Mill the popping corn 1 1/2 minutes speed 9.
Return the rice to the bowl and add salt and xanthan gum.
Mix with 2 turbo (1 sec) blasts
Scrape down sides, add wet ingredients, mix 1 min/speed 5.
Rest for 15 minutes (I like to transfer the dough to another bowl if you don't have a second BBL - then you can continue to prepare your filling for your tortillas)
Heat a sandwich press and cut 2 pieces of baking paper (the size of the sandwich press plate). Spray one side of each piece of paper with oil.
Put a large tablespoon of the dough on the oiled side of the baking paper. Put the oiled side of the other piece of baking paper on top and gently push out the dough in a circular shape. Use a rolling pin to roll out thinly.
Put the baking papers (with the tortilla in the middle) in the sandwich press and leave for 15-20 seconds. Take off the top paper (You will know if its ready as it won't stick). Flip it over and give it another 10 seconds and remove the other paper. Lift off the press with a spatula.
Repeat with remaining dough

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Most health food stores carry Xanthan gum. My local Coles also carries it. I've never used an alternative, sorry I'm not sure.
Where do you buy xanthan gum?

Absolutely, just flip your tortilla (still pressed between the baking paper) in the frypan so that both sides are cooked
Can you cook these in a frying pan? We don't have a sandwich press.
