Ingredients

Dry

  • 1 orange, rind
  • 1 lemon, rind
  • 20 grams dried apricots, soaked if preferred
  • 40 grams dried cranberries
  • 320 grams almond meal
  • 1 teaspoon ground all spice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1 teaspoon bicarbonate soda
  • 1 pinch salt

Wet

  • 2 eggs
  • 60 grams sweetener, honey or maple syrup
  • 2 tablespoon extra virgin oilive oil

Recipe's preparation

  1. 1. Set the oven to 180°C.


    2. Mill orange and lemon peel until fine
    SP6 / 10 seconds (or until preferred consistency)


     


    3. Whisk the eggs (or flax eggs),  sweetener and extra virgin olive oil until light and fluffy
    SP5 / 15 seconds

    4. Add the ground almonds, spices, bicarbonate of soda, salt, 
    dried fruit and zest to the bowl and mix well
    SP3 / 10 seconds


    Note:
    The mixture can be quite sticky; if it feels too runny add a little more almond flour or desicated coconut to the mixture.


    5. Roll the mixture balls, placing on a baking tray lined with baking parchment or your TM Mat.

    6. Place into the oven, cook at 180°C for five minutes then turn the heat down to  150°C and cook for a further twenty-five to thirty minutes or until they are browned & spongey on the top.

    Note: 
    Cover with some foil towards the end of the cooking time if they appear to be getting too brown. The buns are ready if they sound hollow when tapped underneath.


     


    Leave to cool on a rack. They will have cracked a little. If you want to use a sharp knife before cooking and lightly cut a cross into the top, it might prevent some of the cracks.


     


    Note:


    I have been storing mine in the freezer once cooled to eat throughout the week & find the flavour & texture remains spongey & flavorsome

Tip

I have also used half portions of almond meal & the remaining meal milled from flax seeds which produce a darker bun however I found the finished results to be more accurate as how they were described in the recipe (hollow sound when tapping the top) from the almond/flax combination
