Ingredients
Hot crossed buns
- 400 g bakers flour
- 200 g wholemeal flour
- 300 g low fat milk
- 20 g Yeast, or 1 sachet
- 1n teaspoon ground cinnamon
- 1 teaspoon mixed spice
- 2 tablespoon rice syrup, or golden syrup
- 50 g Currents
- 50 g Cranberries, (or 100g any dried fruit)
- 40 g olive oil
- 1 egg
Cross or piping
- 80 g flour
- 1 pinch salt
- 1 teaspoon oil
- 100 g water

1. Place milk and yeast into mixing bowl and heat 3min/37°C/Speed 1.
2. Add flour, wholemeal flour, oil, golden syrup, eggs, spices and mix 6sec/speed 7
3. Scrape down sides of mixing bowl with specular, then 2min/"Dough mode"
4. Add dried fruit and cranberries, mix 10sec/"Counter-clockwise operation" /speed 5
5. Transfer dough onto ThermoMat or floured surface and work into a ball. Wrap ThermoMat, or place into a bowl and cover with plastic or kitchen towel. Leave to prove in a warm place until doubled in size (approx 30minutes).
6. While dough is proving – Preheat oven to 220°C and line a baking try with baking paper and set aside.
7. Knock down dough and divide into 12 equal-sized pieces using the specular. Form into rolls and place close together onto prepared baking tray then set aside to prove again while you prepare the piping.
8. Place plain flour, salt, olive oil and water into mixing bowl and mix 30sec/speed 4
9. Pour into piping bag and pipe crosses onto the top of buns. Bake for 10-15min (220°C) or until golden brown.

This recipe was inspired by Michelle Bridges 12wbt Hot Crossed buns and has around 180 calories per bun.
To make chocolate chip Hot cross buns omitt fruit and add 200g of chocolate chips.
If you dont have a piping bag use a zip lock bag and cut off the corner once you place the piping in the bag

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
