Ingredients
- 1 cup Carrot, (grated)
- 1/2 cup dates, (soak in boiling water for 5mins)
- 50 g almonds
- 50 g pecans
- 1 tablespoon Flaxseed Meal
- 2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/8 teaspoon salt
- 150 - 200 g dark chocolate
- 1 teaspoon coconut oil, (melted)

1. Soak dates in hot water for 5 mins. Drain and remove excess water.
2. Mill almonds for 10sec on spd 10. Set aside.
3. Place dates in bowl 3 secs on spd 8. Scrape sides of bowl. Chop again on spd 6 for 3 secs.
4. Add pecans and chop on spd 6 for 6 secs.
5. Add all other ingredients except for chocolate and coconut oil. Blitz on spd 7 for 10 secs. Repeat until you reach a desired consistency.
6. Check mixture to see if its combined. Make into balls and place into freezer.
7. Rinse bowl. Melt oil for 1min, 50C on spd 2. Add chocolate and melt for 3 mins, 50C on speed 3.
8. Remove balls from freezer and coat in melted chocolate. Place in fridge until ready to serve.

I made these for work and they were enjoyed by everyone. I made them in a TM3.1 with no issues. I found the mixture a bit too wet. If I was making them again I wouldn't soak my dates to see if that helped.

These are absolutely ridiculous! I was hesitant because no one had posted a comment but these are dangerously yum. They come out perfectly moist and tasty, and i coated in the lint 70% dark chocolate only cos i couldnt find my usual black and greens. Hit with the whole house. Thanks for the reciepe
