Ingredients

Base

  • 200 g plain biscuits
  • 50 g Butter, melted

Filling

  • 300 g cream cheese, softened
  • 175 g caster sugar
  • 25 g plain flour
  • 1 teaspoon cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.5 teaspoon mixed spice
  • 350 g crème fraiche
  • 3 eggs, beaten
  • 1 tablespoon vanilla extract
  • 1 orange zest

Topping

  • 200 g berries / cherries of choice
  • Icing Sugar to Dust

Recipe's preparation

    Step 1
  1. Preheat oven to 150 degrees. Line a springform pan with baking paper and set aside

  2. Step 2
  3. Place biscuit into mixing bowl for 3 secs / speed 8.  Add the melted butter to the fine bread crumbs and mix 3 secs / speed 5 to combine. Place crumbs into baking tin, press evenly onto base to form a firm, smooth surface and place into the fridge.

     

  4. Step 3
  5. Place all filling ingredients into mixing bowl and combine 25 secs / speed 2.5. Pour mixture into the baking tin, put into oven on lowest shelf for 50-55 mins.  Allow to cool before chilling in the fridge for at least 3 hours.

  6. Step 4
  7. To serve, remove the cake from tin and place on a serving plate. Scatter fruit of choice atop the cake and dust generously with icing sugar.

Tip

Soak chosen berries in brandy, orange juice and icing sugar prior to topping cake for a more decadent flavour.
