Cheesy Herb Mini Loaves

  • 315 g self-raising flour
  • 1 teaspoon baking powder
  • 1 tablespoon paprika
  • 1 sprig thyme leaves
  • 1 sprig rosemary leaves
  • 1 teaspoon salt
  • 0.5 teaspoon cracked pepper
  • 1 egg
  • 1 egg white
  • 40 g coconut oil
  • 260 g Milk
  • 80 g parmesan
  • 1 red onion, quartered
  • 100 g grated cheese

Recipe's preparation

  1. 1. Preheat oven to 180 degrees.  Grease or line a 12 muffin tin. If you are not using already grated cheese, do this first.  Cut cheese into small blocks, then grate 5 secs / speed 6.  Continue until desired consistency is achieved.  This is to top the loaves before baking, so can be chunky if preferred. Set cheese aside.

    2. Place parmesan cheese into bowl and mill 10 secs / speed 10.  Set 1 tablespoon of cheese aside to top loaves and leave rest in the bowl.

    3. Place onion, thyme and rosemary into the bowl and cut 5 secs / speed 8.  This should cut the onion finely. Scrape down side of bowl.

    4. Add milk, eggs and coconut oil and mix for 10 secs / speed 3. Scrape down side of bowl.

    5. Add flour, baking powder, paprika, salt and pepper and mix on dough setting for 20 secs.  Scrape down sides of bowl to ensure all ingredients are combined.

    6. Place mixture into 12 muffin tins, greased or lined.

    7. Top with grated cheese and parmesan and place in oven to bake for 20-25 mins until top is golden brown.

Tip

The muffin cases can be hard to get off, so greasing the muffin tins may work better.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
