Ingredients
Chocolate Self Saucing Pudding
- 75 g Coconut sugar, (for sauce)
- 15 g cacao powder, (for sauce)
- 100 g almonds
- 65 g brown rice
- 80 g coconut oil
- 100 g rice milk
- 1 egg
- 15 g cacao powder
- 90 g Coconut Syrup
- 1 tsp Guar Gum
- 2 tsp baking powder
- 350 g Boiling water

1. Preheat oven to 180C. Grease a 2lt baking dish
2. Place coconut sugar and cacao powder (for sauce) in Thermomix bowl and mix for 5 seconds / speed 3. Set aside
3. Place brown rice in Thermomix bowl and mill for 50 seconds / speed 9. Add almonds and mill for another 20 seconds / speed 9. Set aside
4. Place coconut oil in Thermomix bowl and cook for 2 minutes / 50C / speed 3
5. Add rice milk and egg and mix for 3 seconds / speed 3
6. Add cacao, coconut syrup, guar gum, baking powder and almond rice mix and blend for 20 seconds / speed 3
7. Pour mixture into prepared baking dish. Sprinkle over cacao sugar mix (for sauce).
8. Carefully, over the back of a metal spoon, pour boiling water over pudding. Bake for 35 - 40 minutes
Tip
Serve with whipped coconut cream and mixed berries
