Ingredients

Ice cream

  • 500 g Oat Milk, or other dairy free milk
  • 200 g coconut cream
  • 100 g sugar, I love brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 pinch salt

Recipe's preparation

  1. Add all ingredients into the bowl of the Thermomix. Cook for 7 mins / 80° / sp 4.

  2. Pour into a large flat dish that will fit into the freezer.  Freeze for about 4 hours and then cut into cubes and return frozen cubes to the Thermomix bowl.


    Blitz for 20 secs / sp 9.  Scrape down sides of the bowl and then reblitz for another 20 secs / sp 9.

  3. Pour into a 1 litre container and freeze for 4 hours or until firm.

Tip

This does freeze quite solid but I find if I take it out of the freezer for at least 10 minutes prior to serving, I'm able to scoop the ice cream easily.

My favorite sugar to use is BROWN SUGAR but use any sugar you like.  I really love the caramelly taste of the darker sugars but even though it's still vanilla ice cream, it does have a light brownish colour! Super delicious though and very much loved by all my dairy free family! tmrc_emoticons.)

PS: the coconut flavour is not over powering at all. Enjoy!

    Great tasting nutty icecream. The coconut taste was just right.
    I churned it in my icecream machine, worked perfectly.

    Next time could always play around & add cocao or banana to the mixture in step 1.

    I use the exact amount & ingredients as listed & it turned out perfect.

    Apologies but I never received a notification of your message/question. Using coconut milk will not be as creamy and the ice-cream will come out more "watery" with more icicles. It's nicer with coconut cream (and better if using a good quality full fat version too).

    I really enjoyed this! and it beats paying the expensive $$ for the store bought dairy free coconut icecream.  Looking forward to using it as a base for other flavours.

    I changed the liquids and  used 400ml coconut cream and 400ml coconut milk instead and added 2 bananas at step 1. It turned out beautifully! This is a great recipe to use as a base for other flavours

    Super easy! I used full cream lactose free milk and brown sugar. It's very creamy. I find the coconut very strong although I'm not a huge coconut fan. It was delicious with chocolate brownie tmrc_emoticons.)
