Lovely Ginger Cake. I had my doubts about using Plain Flour and was delighted with the light and smooth texture. We didn't eat the cake for a couple of days and I then lightly toasted slices in the sandwich toaster and spread sparingly with butter. Absolutely delicious!! My family loved it.

I made this with rice milk/dairy free marg, as my daughter is allergic to cows milk, and it still tastes delicious. Thank you!

Tried your recipe last night and it was a huge hit! Next time I might put in a little extra ginger, but it is my new favourite! Thank you so much for posting!

This recipe is not only simple but also tastes way too good.  It looks like I might need to make a second one...to get through the day.  It should come with a warning that eating it can lead to addiction.   Love
