Recipe's preparation

    Caramel
  1. Add all ingredients and cook 9 minutes, 100 degrees, speed 4.

This is my nanas caramel that she has always made, stiring over the stove and it is always always always perfect. The Thermie, although I love it - is no match for my nana - but it is pretty damn close tmrc_emoticons.)

Works great in a caramel tart. Make thicker with more flour if you prefer but I love this velvety texture.

This is delicious caramel! I need to qualify that I do not like caramel at all but I made it his as it was required in a recipe. Of course I had to try it and now I am converted! I love caramel!! I'd love to serve this to guests while it is still warm, drizzled over good quality ice cream and sprinkled with some roasted, salted peanuts.

Thnks for sharing this, I had been looking for a dulce de leche tm recipe, such a good alternative to the store bought abs a lot better than boiling the condensed milk tins. I made it tonight, super simple. Thanks once again!

Would this be thick enough to use for a caramel tart?

  • 15. December 2014 - 18:40

Could you blend this through the creme anglaise recipe. My daughter wants caramel custard.

  • 14. December 2014 - 15:27

Possibly! I haven't tried. Not sure it will reconstitute with the same texture. If you give it a try let me know how you go!

Do you think you could freeze this?
