Ingredients
Mixture
- 110 g raw sugar
- 65 g Butter
- 1 egg
- 2 tsp vanilla essence
- 150 g plain flour
- 1 tsp baking powder
- 75 g Milk
- 45g g almond meal, or you can mill your own first and put aside
Fruit
- 60 g fruit, Can be fresh or frozen (berries work well)

Pre-heat oven to 180˙ or 160˙ if using fan forced.
Using a muffin tray line 10 holes with paper inserts or silicon moulds.
Mill the raw sugar for 3 seconds on speed 9 and put aside.
Soften butter in the TM bowl for 1 min at 37˙ on speed 2
Once butter is soft, add back the sugar and then add egg and vanilla. Beat for 2 mins on speed 4 or until a nice pale colour.
Scrap down sides of the TM bowl then add flour, baking powder and milk. Combine for 30 seconds on speed 1 or until all combined.
Add almond meal to the mixture and mix in well for 20 seconds on speed 5.
Spoon the mixutre into the muffin trays, filling to about half way (these will rise well in the oven). Top each tea cake with a piece of fruit or several pieces depending on what fruit has been chosen.
Bake for 15 to 20 mins or until golden brown. Once ready, allow to cool on cooling rack. Can be served on their own, topped with icing sugar or with a little cream on the side.
Tip
In the picture I have used tinned peaches as the fruit, cut into pieces and placed one piece on top. You can vary this to whatever your preference is or even use chocolate buttons

These little cakes looked exactly like the picture. I used peaches as well. They were pretty ordinary! Fairly tasteless.
