Ingredients

Pudding

  • 230 grams Jasmine rice (rinsed well)
  • 800 grams dairy milk or coconut milk
  • 60-70 grams Coconut sugar
  • 5 tablespoons Rose Water, I use Cortas brand
  • 10 grams dairy cream or coconut cream

Topping

  • 6 heaped tablespoons crushed nuts, pistachio's, almonds, walnuts
  • 6 pinches ground cinammon
  • 6 pinches dessicated coconut
  • 6 heaped tablespoons diced fruit, mango, apricot, peach

Recipe's preparation

    Pudding
  1. Heat milk in bowl 10min 90deg sp2

    Add rice, cream, rose water and coconut sugar. 20min 90deg sp2 Counter-clockwise operation"Counter-clockwise operation" . MC off to let the milk evaporate

    Rice should be cooked and milk should be thick, but slightly runny. Pour into serving cups or dishes and refrigerate. It should take no more than 2 hours to cool and set. I like it served cold. 

     

    Topping: Get creative! You can add a sprinkle of sultanas, or the nuts or fruit topping. I like mine with the nuts, it's an old family tradition

Tip

You could add a drop of vanilla for a bit of extra flavour 

 

To make chocolate rice pudding, before step 1, take 150g dark or milk melting chocolate, 10sec sp5 then add the milk to heat. You may need to add more sugar depending on your taste. You could also use cacao or carob

    I made this dish exactly as above but unfortunately the rice was still crunchy.  The flavours were good.  I am thinking of reducing the temperature slightly (as the milk burnt on the bottom of the bowl) and increasing the cooking time. I will also pour it into my thermoserver to rest before spooning it into individual small bowls.  I will report back once completed.
