- 60 grams Butter
- 160 grams sugar
- 2 Bananas, large, very ripe
- 220 grams plain flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 2 eggs

Pre heat oven to 180C.
Prepare loaf tin.
Place sugar and butter in TM bowl for 5 seconds on speed 4. Add the remaining ingredients with the exception of bananas 20 seconds on speed 4. Add roughly sliced bananas "Gentle stir setting" for 10 seconds. Then 10 seconds on speed 1 to finish mixing. Pour into prepared loaf tin and bake for 50 minutes in oven.
Tip
Cool cake on wire rack. Good luck if you can refrain from eating it when it's cooling.. The cake cuts best if it's cool.

I also used brown sugar, been making for a fusy 5yr olds lunch box, but it doesn't last long here.

made this for a second time today but halved the sugar. Do not do this! The recipe is perfect as it is.

Tried this last night and let it cool overnight so havent actually tasted it yet. Found I needed to mix more than the recipe said to incorporate but butter was cold and only sliced bananas also added a shot of expresso, but the bread looks awesome held together great and smells divine. Will taste later today.

Cooked this banana bread today, really nice. Very happy with flavor. Hubby is not a big sweet eater but enjoyed it! Thankyou I'll be doing this again.
Really lovely result. And very friendly on the hips considering how bad banana bread can be! I just found that when I added the bananas, I had to mix them at about speed 4 in order to incorporate them into the mixture better than the "Gentle stir setting" allowed. Other than that, very very good and I am sure it will become a family favourite. I have already made two as we're half way through the first loaf!
