Ingredients

Cake

  • 200 grams pitted dates
  • 180 grams water
  • 2 teaspoons Bi-carb soda
  • 50 grams Coconut sugar, (optional)
  • 70 grams coconut oil
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 100 grams tapioca flour
  • 30 grams almond meal

Sauce

  • 150 grams dates, (soaked in boiling water 10 mins)
  • 1 teaspoon vanilla essence
  • pinch salt
  • 1 tablespoon coconut oil
  • 220 grams coconut cream

Recipe's preparation

    Cake
  1. Preheat oven to 180C. Lightly grease or line a round cake tin (20cm)

    Chop dates 6 seconds on speed 5

    Add water, 5 minutes, 100C, on Speed 1.

    Add bi-carb soda 3 seconds, speed 2

    Set aside

    No need to rinse bowl

    add to bowl coconut oil, flour, sugar, eggs, flour and vanilla

    mix well, speed 5 for 3 minutes

    fold through reserved date mixture

    Pour cake mixture into prepared tin and place in preheated over. Bake for 50 minutes or until skewer comes out clean

    Leave to rest for 10 mins before turning out.

  2. Sauce
  3. Add the drained dates, vanilla and oil to bowl and mix until sauce thickens then Add salt and coconut cream speed 5, 80c 4 mins or until well combined and creamy.

Tip

replace coconut sugar with 30 grams of pure maple syrup

    Absolutely loved this recipe!! So often we skip dessert when socialising because of our dietary needs, but I made this and took it along the to a recent event and everyone loved it! Thanks! 

    Ps. Being that we don't have much sugar, I might reduce the amount of coconut sugar in the cake next time as the dates tend to add plenty of sweetness!!
