Ube Halaya (Ube Jam)

  • 908 grams Ube or Purple Sweet Potato, Frozen can be found in asian Supermarkets
  • 500 grams water
  • 1 can sweetened condensed milk
  • 236 grams evaporated milk
  • 1 can coconut milk
  • 58 grams brown sugar, optional
  • 1/2 tsp salt
  • 114 grams unsalted butter
  • 1 tbsp UBE extract, Asian Grocery Stores

Recipe's preparation

    Prepare the Ube
  1. Peel the Ube or sweet potato. cut into 1" chunks and place in steaming basket.
  2. Steam on Veroma 20 min or until soft and fork goes through with no resistance
  3. once cooked, discard water and place Ube in bowl with wish attached.
    wisk for 1 minute speed 4Counter-clockwise operation"Counter-clockwise operation"
  4. remove wish. Add coconut milk, evaporated milk and condensed milk to the Ube and blend speed 6 30 seconds taste and add sugar (if required)
  5. cook for 30 mins speed 3 at 80'C it should think as the cooking process.
  6. Add Ube extract and butter cook through for another 5 mins.
  7. blend til desired consistancy (ilike a smooth creamy texture so usually 1 min at speed 10)
  8. Carefully transfer to sterile heat proof just with lid .

Tip

Ube: Use fresh ube purple yam or fresh sweet purple potato or purple Okinawan sweet potato. Note: that this recipe has not been tested with frozen or powdered ube.
Ube extract: can be added to boost the aroma of the jam. This is optional. If using, start with ½ teaspoon and add more base on preference.
Consistency: as the jam cools down, the consistency will get thicker.
Storage and Shelf-life: store in an airtight container, best to use a glass jar. It should last in the fridge for 5 days and 1 month in the freezer. Use a freezer-safe plastic container if freezing. Divide into smaller amounts if preferred.
