Ingredients

Spinach Rice

  • 300 grams basmati rice
  • 100-200 grams Frozen spinach

Bombay Chicken

  • 3 centimetre fresh ginger, peeled
  • 3 cloves garlic, peeled
  • 1 --- brown onion, halved
  • 1 red chilli, deseeded
  • 20 grams olive oil
  • 1 1/2 tablespoon curry powder
  • 1 tablespoon vegetable stock
  • 1 tablespoon tomato paste
  • 600 grams chicken breast, diced
  • 1 can diced tomatoes
  • 50 grams coconut milk powder

Serve with

  • 1 package Mini Pappadums
  • 1 jar Mango Chutney

Recipe's preparation

    Spinach Rice
  1. Weigh rice into TM basket, remove from bowl and rinse under cold water until water runs clear.

     

    Place TM basket in bowl, weigh in 900g water Cook 10 mins/Varoma/Speed 4

     

    Place the frozen spinach on top of the rice and cook for a further 4 mins/Varoma/Speed 4

     

    When cooked place in Thermoserver stirring spinach through rice before setting aside.

  2. Bombay Chicken
  3. Place Ginger, Garlic, Red Chilli & Brown Onion in bowl and chop 5 sec/speed 7.  Scrape down sides of bowl and add Olive Oil and Curry Powder to bowl and saute 3 mins/Varoma/Speed 1.

     

    Add Tomato Paste, Vegetable Stock, diced Chicken and cook  2 mins/100 degrees/ Counter-clockwise operation"Counter-clockwise operation"  reverse Gentle stir setting"Gentle stir setting"  speed soft.

     

    Add can of Tomatoes and cook for 10 mins/100 degrees/Counter-clockwise operation"Counter-clockwise operation"  reverse Gentle stir setting"Gentle stir setting"  speed soft with TM Basket on top in place of MC to allow steam out.

     

    Meanwhile, start cooking the Pappadums in your microwave.  Spread approx 6 Pappadums on a plate and place in a 1000W microwave for 1 minute.  Repeat until all cooked.

     

    Stir with TM Spatula to ensure Chicken is loose of blades.  Add Coconut Milk Powder and cook for a further 5 mins/100 degrees/Counter-clockwise operation"Counter-clockwise operation"  reverse Gentle stir setting"Gentle stir setting"  speed soft.

     

    Serve in Thermoserver to keep warm

Tip

This is a family favourite... my kids love being able to eat with their fingers!  To assemble simply pile rice and chicken on pappadums with a small dollop of mango chutney.

    i ended up using 50g coconut cream. it obviously wasnt enouhg because there was no creaminess to sauce. asked hubby if it was nice and he said, 'it wasn't NOT nice'... a bit bland for us but thanks for posting such an easy recipe.

    This dish is a regular in our house.  So easy to make and so tasty.  I stir the spinach through the sauce rather than the rice, the kids don't notice they are eating it!

    can i use coconut milk/cream instead of powder?

    Delicious.  I added water to coconut milk powder, not sure if I was supposed to or not?   I would do so again though.  Mase naans to go with it.

    Didn't have pappadums or chutney so we just had the spinach rice and curry but the whole family loved this. Even the kids finished their dinner for once and hubby commented that this was the best dish made from the Thermomix so far!
