Ingredients
Pizza Base
- 100 g Cheddar cheese
- 80 g parmesan
- 3 cloves garlic
- .5 red chilli
- 500 g Frozen Cauliflower
- salt, to taste
- pepper, to taste
- 140 g egg whites, (from a carton)

Preheat oven to 220C
Put cheeses and garlic in TM bowl and grate 10 secs/ sp 9.
Add chilli and mix 5 sec/ sp 5. Set aside
Fill TM bowl with 1L of water. Put cauliflower in varoma and steam for 20 mins/ varoma/ sp 3. Allow cauliflower to cool slightly and empty TM bowl.
Squeeze out cauliflower (it's important to squeeze as much water out as possible) and put into TM bowl, along with reserved cheese mixture, salt and pepper to taste, egg whites.
Pulse /Turbo/ 3 times/ 1 sec
Tip mix onto a 20x30cm lined baking tray. Spread it all over the tray evenly. Bake at 220C for 20mins. (Optional is to flip it over at 15 mins to brown on both sides).
Allow to cool slightly and then spread with usual pizza toppings and bake for a further 10mins.

Great recipe, I substituted for Lidells Lactose free cheese and fresh egg whites and all worked just as well, even Hubby prefers this over regular pizza bases now!

I found I had to squeeze all the water out by mashing the cauliflower in paper towel. I spread it on the tray very thin and it went crispy.
The second time I made it I added two whole eggs (rather than just whites) it was just as amazing.
Hi Andrea, thanks for the feedback for this recipe. We're wondering if maybe your cauliflower was too wet. From our research the recipe's success is dependant on the water being completely squeezed out after steaming. Nobody wants a soggy pizza base!

How thin should this base be? I used half of the mix and spread it onto baking paper on a pizza tray and it browned okay but was complete mush. Wondering if I had it too thick perhaps ? Tasted fine but disappointed with it as a pizza base.
My husband and I loved this. He said he would have even paid money to eat it - thank you for the recipe.
Could you do this without the cheese do you think?
id also be trying with fresh cauliflower- I presume less water content too?

You can buy egg whites in a carton in australia from woolworths (and Coles I think too) - most of the time they're in the refridgerated egg carton section although I did see them once in the cream area. The brand is called NATUREGG SIMPLY EGG WHITES, its in a 500g "milk carton" and they do 3 varieties including one which is egg whites only. They're awesome BC you can whip them into meringues. There's another brand in the frozen food fridge (in the frozen fruit area) and that's called GOLDEN EGGS EGG WHITES, blue soft pouch, 950ml size but these egg whites are pasteurised so you can't use them for making meringue. I use both now and substitute egg whites for whole eggs when I bake with no loss of flavour etc, just loss of calories and less cholesterol!
Mine didn't crust on bottom.. when I try to lift it it fell apart.. what could I have done wrong?
