Ingredients

Cheese filled meatballs in tomato sauce

  • 150 grams Mozzarella Cheese, Cubed
  • 60 grams cream cheese
  • 5 grams Fresh herbs, Parsley, chives
  • 700 grams mince
  • 80 grams onion
  • 2 cloves garlic
  • 2 teaspoons Dijion mustard
  • 80 grams onion
  • 2 cloves garlic
  • 20 grams olive oil
  • 400 gram Tin whole tomatoes
  • 1/2 small red chilli, Optional
  • 60 grams tomato paste
  • 1 fresh basil leaves, 1 handful

Recipe's preparation

    LCHF Cheese stuffed meatballs in tomato sauce perfect for subs or sandwiches.
  1. Place herbs into Closed lid"Closed lid" , blitz speed 9 for 3 seconds. Set aside


    Without washing the bowl


    Add mozzarella cheese blitz speed 5 for 5 seconds.


    Add cream cheese & mix speed 4 for 4 seconds.


    Roll into 17-20 balls about 1.5cm & set aside.


    Without washing the bowl


    Place 80gms onion, 2 cloves garlic & mustard into Closed lid"Closed lid" blitz speed 5 for 4 seconds


    Add reserved herbs, mince, S&P. Mix turbo speed 1 second 3-4 times until mixed.


    Take scoops of the mince mixture & flatten to about the size of your palm, place a round of the cheese mix in the middle & fold the mince around it sealing it up. Roll into balls. You should get 17-20 golf sized meatballs from the mix. Place in fridge.


    Without washing the bowl


    Add remaining onion & garlic with chilli ( optional) & half the basil leaves into Closed lid"Closed lid" blitz speed 5 for 4 seconds.


    Place olive oil into jug, cook 5 mins,100 deg, speed 2 MC off.


    Add tomatoes & paste, chop speed 4 for 2 seconds.


    Cook 20 mins, varoma, speed 2 MC off.





    While sauce is cooking place either a good knob butter or splash olive oil into pan add meatballs & cook on a low heat.


    You have to be gentle with the meatballs that you don't break them when cooking. Small amounts of cheese may ooze out of the meatballs but don't worry about that.





    Once sauce & meatballs are cooked place together in a bowl & spoon into your favourite bread roll.

Tip

The sauce is very thick & designed to coat the meatballs nicely. If you want more sauce increase the tomatoes to two (2) tins following the same method.
