Ingredients

Chelsea Winter Morrocan Chicken and Apricot Salad

  • 300 g orange juice
  • 60 g honey
  • 120 g dried apricots
  • 1000 g boneless skinless chicken thigh
  • 40 g olive oil
  • 3 tsp cumin seeds
  • 3 tsp Ground Coriander
  • 2 tsp paprika
  • 2 tsp ground turmeric
  • 1/2 tsp mixed spice
  • 1/4 tsp ground cinnamon
  • 1/2 tsp ground white pepper
  • 1/2 tsp ground black pepper
  • 1 lemon, peeled zest
  • salt, to taste
  • 1 bunches fresh coriander
  • 2 garlic cloves
  • 40 g plain yoghurt
  • 40 g mayonnaise
  • 200 g Israeli Couscous
  • 800 g water
  • 80 g slivered almonds
  • 1 red onion
  • 3 --- Fresh Baby Spinach, cups/handfuls

Recipe's preparation

    Apricots
  1. 1. Weigh in orange juice and honey, melt together 2 min, 80 degrees, speed 2.
    2. Weigh apricots into a bowl, add the orange and honey mix. Soak for at least 1 hour.
    3. Wash and dry bowl.
  2. Marinade
  3. 6. Add all dry spices and lemon zest, chop speed 8 up to 5 seconds
    7. Add oil and mix, speed 4, 3 seconds.
    8. Cover chicken thighs in marinade. Marinade for at least 1 hour.
  4. Dressing
  5. 9. Add garlic cloves and coriander, chop speed 9, 3 seconds
    10. Add yoghurt and mayonnaise, mix speed 4, 20 seconds
    11. Set aside
  6. Israeli Couscous
  7. 12. Weigh the couscous into the steaming basket, rinse till clear.
    13. Weigh in water, add in steaming basket.
    14. Cook 20min, varoma temp, speed 2.
  8. Salad
  9. 15. Toast almonds lightly on stove top
    16. Add spinach, mint, red onion and coriander to a platter.
    17. Add in couscous, when slightly cooled. Mix through with 2 tablespoons of dressing
    18. Cook chicken on BBQ, pan or grill.
    19. Slice chicken and place on salad, top with nuts and more dressing.

    I have started making this recipe but not sure where the apricots and juice come in. Am I reading something wrong?
