- 15 grams fresh ginger
- 2 cloves garlic
- 5 Birdseye chillis (with seeds)
- 1 tablespoon apple cider vinegar
- 1000 grams Chicken (mix breast and thigh)
- 1 onion (halved)
- 60 grams Butter
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 teaspoon smoked paprika
- Half teaspoon chilli flakes
- 3 cloves
- 5 cardamon pods, Bashed
- Half teaspoon salt
- 400 grams Tinned tomatoes
- 60 grams tomato paste
- 100 grams coconut milk
- 150 grams cashew nuts
- 1 red capsicum

150gms cashews in bowl and blitz 10 secs/speed 9 (MC on). Put in bowl for later
15g ginger, 2 cloves garlic, 5 Birdseye chillis and tablespoon Apple cider vinegar. Spd 9/2 secs - scrape down and repeat twice more
Add 1 kg cubed chicken (I use mix of breast and thighs) 5 secs/"Counter-clockwise operation" /speed 2 (put aside in bowl for later)
Add onion, 5 secs/speed 5 then scrape down and add butterfly and 60g butter cook 5 mins/varoma/speed 2
Add spices (cumin, turmeric, chilli flakes, paprika, cloves, cardamons and salt cook 2 mins/100degs/"Counter-clockwise operation" /stir speed "Gentle stir setting" (butterfly remains in for rest of recipe)
Add tin tomatoes and tomato paste then cook 5 mins/100degs/"Counter-clockwise operation" "Gentle stir setting"
Add reserved chicken and cook 14mins/100degs/"Counter-clockwise operation" /"Gentle stir setting"
Add chopped capsicum, coconut milk, and reserved cashews
cook 5 mins/100degs/"Counter-clockwise operation" "Gentle stir setting"
Finish off with some fresh coriander (remember and remove cardamon pods)

Tip
For creamier curry use coconut cream and last time I also added in a tablespoon of mustard seeds when I added spices

Nice easy recepie that has good flavor. Despite me adding extra chilli's this wasn't very hot to my surprise. I don't think this is a traditional Madras but it's nice anyway. I added some frozen peas and used a mix of chicken breast and some chicken pieces with bones.

Easy recipe to follow and beautiful flavours. Not as hot as I was expecting so I might add more chillis next time, but the flavour has such good depth.
only feeding 2 adults here so cut down to 500gm chicken, but kept the amounts the same for all other ingredients, and added some frozen peas. YUM YUM YUM.
