Ingredients

Chicken Parmies

  • 6 slices bread, Stale is fine
  • 2 level tsp salt
  • 1 pinches black pepper
  • 1/2 level tsp smoked paprika
  • 1/2 level tsp Onion powder
  • 1 egg
  • 2 Large or 3 medium chicken breasts
  • 90 g Parmesan cheese
  • 50 g Butter, For frying
  • olive oil, For frying
  • Leftover bolognaise sauce OR tomato paste/pizza sauce
  • 100 g Grated Mozzarella

Recipe's preparation

  1. Preheat oven to 170 degrees.

    Place bread in TM with 1 tsp of the salt, black pepper, smoked paprika and onion powder.
    Blitz for 5 secs sp 9.

    Set aside in a large dish.

    Without washing bowl place Parmesan cheese and grate 10 sec sp 9.
    Add to bowl the egg, chicken breast and remaining 1 tsp salt.
    Mince for 40 sec sp 9.

    Divide the mixture into 6 portions.
    Take one portion and roughly shape into a pancake. Place into breadcrumb tray and press down, flattening to desired parmie thickness. Turn over and ensure whole patty is covered in breadcrumbs. Repeat for other 5 portions.

    Heat a frying pan on medium/high and melt some butter and or some olive oil. I used both. Fry parmies for 5 mins each side.
    If you're doing a few at a time add butter/oil before each new parmie is added.

    Place on baking tray and oven bake for 10 mins.
    Remove from oven, top each parmie with leftover bolognaise sauce (or tomato paste/pizza sauce/whatever you have) then grated mozzarella on top of the pizza sauce. Place under a hot grill for a few minutes until mozzarella is browned then serve with chips or salad.

You can portion it smaller and make into chicken nuggets tmrc_emoticons.)
