Ingredients

Curry

  • 2 cloves garlic
  • 1 red onion, quartered
  • 1 tbsp coconut oil
  • 5 tsp mild curry spice mix, (divided into 2 &3 tsp)
  • 1 sweet potato, roughly chopped
  • 1/2 tsp cayenne pepper
  • 500 g Organic Chicken Breast, sliced
  • 5 vine-ripened tomatoes, roughly chopped
  • 1 tbsp vegetable stock concentrate
  • 1 can Organic Coconut Milk, halved
  • 1 carrot, roughly chopped
  • 1 Capsicum, deseeded, roughly chopped
  • 1/2 cauliflower, cut into florets
  • 1 can organic chickpeas, drained, rinsed
  • 1 cup green beans, roughly chopped
  • 1/2 broccoli, cut into florets
  • 1 cup frozen peas
  • 1 Cup frozen Corn

Recipe's preparation

    Preparation & Cooking
  1. Place garlic and onion into bowl and chop on speed 7 for 3 seconds.

     

  2.  Add oil and saute on 100C, 3 minutes, speed 1.

     

  3.  Add sweet potato and 3 teaspoons of spice mix, saute for 4 minutes, 100C Counter-clockwise operation"Counter-clockwise operation" , speed 1.

     

  4.  Add cayenne pepper, chicken, tomatoes, vege stock, 1/2 the can of coconut milk and carrots. Cook for 10 minutes, 100C, Counter-clockwise operation"Counter-clockwise operation" , speed 1.

     

  5.  Add the rest of the coconut milk, capsicum, cauliflower and chickpea and cook for a further 10 minutes, 100C, Counter-clockwise operation"Counter-clockwise operation" , speed 1.

     

  6.  Place the broccoli, beans, peas and corn in varoma to steam. Continue cooking for 10 minutes, 100C, Counter-clockwise operation"Counter-clockwise operation" , speed 1.

     

  7.  Combine in a thermoserver and enjoy!

Tip

Pick & Choose which vegetables you want to use - the ones listed are the ones that worked best for me in terms of flavour and texture but feel free to experiment!

Also to make this vegetarian friendly, simply omit the chicken!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
