Ingredients
Chilli Con Carne
- 2 brown onions, (peeled and quartered)
- 2 cloves garlic, (peeled)
- 1 - 2 long red chilli, (halved, deseeded no pith)
- 20g olive oil
- 2 tablespoons ground cumin
- 2 tablespoons ground corriander
- 1 tablespoon paprika, smoked, ground
- 1 - 2 tablespoons chilli powder, (to taste)
- 4 stalks fresh coriander, (leaves and stalks)
- 4 tomatoes, (halved)
- 1 red capsicum, (desseded and quartered) - optional
- 1 carrot, (large, roughly chopped) - optional
- 1 zucchini, (roughly chopped) - optional
- 500g Beef mince
- 2 tablespoons tomato paste
- 1 tablespoon dried oregano
- 2 teaspoons rock salt, (ground)
- 1 teaspoon Black Peppercorn, (ground)
- 2 tablespoons TM stock concentrate
- 800g red kidney beans, (canned - drained and rinsed)

Place TM Lid and MC on "Closed lid"
Chop 4 seconds, speed 6
Scrape down sides of "Closed lid" with spatula
Add olive oil to "Closed lid"
Place TM Lid and MC on "Closed lid"
Sautee 3 minutes, Varoma, "Counter-clockwise operation" Speed 1
Add ground cumin, ground coriander, paprika and chilli powder to "Closed lid"
Place TM Lid and MC on "Closed lid"
Sautee 2 minutes, Varoma, "Counter-clockwise operation" Speed 1
Add fresh coriander, tomatoes, capsicum, carrot and zucchini to "Closed lid"
Place TM Lid and MC on "Closed lid"
Chop 3 seconds, speed 7
Scrape down sides of "Closed lid" with spatula
Place TM Lid and MC on "Closed lid"
Sautee 4 minutes, Varoma, "Counter-clockwise operation" Speed 1
Add beef mince, tomato paste, oregano, salt, pepper and stock to "Closed lid"
Place TM Lid and MC on "Closed lid"
Cook 10 minutes, 100 degrees, "Counter-clockwise operation" Speed 1
Remove MC from lid and place simmering basket on top of TM lid
Cook 20 minutes, 100 degrees, "Counter-clockwise operation" Speed 1
Check consistency of the chilli con carne, if too moist, continue cooking until thickened. If chilli con carne is appearing dry, add some water or return MC to TM Lid.
Add red kidney beans to "Closed lid"
Place TM Lid and MC on
Cook 2 minutes, 100 degrees, "Counter-clockwise operation" Speed 1
Transfer to ThermoServer until ready to serve.

Tip
This recipe is designed to incorporate a lot of vegetables. The capsicum, carrot and zucchini are optional.
If the kids aren't keen on kidney beans but you would like to include the extra fibre they provide, include 1/2 or all the kidney beans when you add the other vegetables.
It is reasonable spicy. For a mild meal reduce the spices, particularly the fresh red chilli and chilli powder. For a really spicy meal include seeds and pith for the chilli

- grind your own coriander and cumin in advance
- mince your own beef in advance
- use 2 teaspoons of TM garlic paste instead of garlic cloves
Serving Suggestions
Serve with brown rice or tortilla chips, cherry tomatoes, lettuce, cucumber, guacamole and sour cream.
