I'm cooking this todayRecipe's preparation
1. Preheat fan forced oven to 180 degrees
2. Add all herbs (aka everything other then the flour) to your thermomix bowl & blitz 20 sec/ "Closed lid" / speed 10
3. Add flour to your thermoserver & then add the herb & spice mix. Using your spatula mix ingredients together.
4. Add your chicken pieces to the thermoserver & place the lid on & SHAKE SHAKE SHAKE IT.
5. Once happy with seasoning coverage place chicken (removing any excess coating) onto a baking tray which you have sprayed lightly with olive oil ( I use a pizza tray I bought from kmart for about $8 it has little holes in it so nothing sticks & everything gets crispy. )
6. Bake for 20 mins remove & turn & bake for a further 20 minutes. ( I am really fussy with chicken especially if its cooked on the bone so feel free to adjust cooking times to suit you. I found the chicken was still really moist with this cooking time)
Serve hot or cold with your choice of sides I went traditional with a potato & gravy
I would love to hear your feedback & enjoy beautiful people
Tip
TOP TIPS - If your chicken isn't moist you can do an egg wash with the chicken before coating mine didn't need this.
You can use any type of chicken thigh, breast, wings even a whole chicken.
There is heaps of seasoning left over so you could easily double the amount of chicken & use the remaining flour & spice mix. Ensure you discard once finished coating ( Do not keep excess for another time - I am sure most of you know that anyway)

Super easy. Made ours Hot and Spicy KFC by rolling chicken in seracha prior to coating. Oven baking was great - assembled salad whilst cooking in the oven. Will be a regular
This recipe has duplicate sections one with 100g flour the other with 500g? The answer may be in earlier posts.
Thats a brilliant idea
We love this recipe too. But I hate the waste so now I have make the spice mix up n keep it in an airtight container then just add a couple of teaspoons to half the flour. N I think it's exactly like KFC only healthier n nicer.

Great recipe, not quite KFC though. I used half of the flour and will use less again next time. Will be a regular feature! Note to self: 2 tbl of plain flour a 2 heaped tbl of mix.
Cooked this last night and Partner loved it. Served with mashed potato & gravy. Had left over tonight cold with salad. Thank you, very very tasty chicken
We love it.
Not quite KFC, but certainly healthier and lighter, and I just substituted some of the herbs with some from my garden and it still works perfectly. Easy 'go to' recipe for chicken.
This gets the KFC taste approval from my 9 & 5 year old boys and I feel better about them having this version occasionally...thank you!
I've made this a few times now and it's been a huge hit! I've used chicken wings and chicken thighs, they all come out delicious! My 22 month old loved them, as did my husband and neighbours. It's on the menu for dinner tonight again. Thanks for posting!
I've tried this recipe with chicken wing nibbles and they were great. They were no KFC, mind, but delicious nonetheless.
After trying this recipe with chicken breast strips, they came out somewhat dry. I might try flouring the tenders first, then egg wash, then seasoning mix to see how that goes. I just wanted them to be a bit more "bready" or thickly coated, perhaps.
Great flavours, though
