Ingredients

Low Carb Cottage Pie

  • 4000 g pork mince, Lean
  • 1 tbsp cold pressed rice bran oil
  • 25 g onion
  • 30 g celery stalk
  • 30 g carrots
  • 200 g tomatoes, diced
  • 125 g water
  • 1 tsp curry powder
  • 1 tsp Dijon mustard
  • 1 tsp Garlic powder
  • 100 g cauliflower
  • 60 g Almond milk
  • 40 g parmesan

Recipe's preparation

    Prepare Vegetables:
  1. Place onion, carrot, and celery into the Thermomix bowl. Closed lid"Closed lid" Chop for 5 seconds / Speed 5.
  2. Scrape down the sides of the bowl.
  3. Add the rice bran oil and garlic powder. Sauté for 3 minutes / 100°C / Speed 1.
  4. Cook Mince
  5. Add lean mince beef. Closed lid"Closed lid" Cook for 5 minutes / Varoma / Reverse / Speed Soft.
  6. Add curry powder and Dijon mustard. Closed lid"Closed lid" Cook for 2 minutes / 100°C / Reverse / Speed Soft.
  7. Simmer Mixture
  8. Add diced tomatoes and water. Closed lid"Closed lid" Cook for 10 minutes / 100°C / Reverse / Speed Soft.
  9. Prepare Cauliflower Mash
  10. Place cauliflower into the Varoma tray. Add 500ml water into the Thermomix bowl.Closed lid"Closed lid"
  11. Steam cauliflower for 15 minutes / Varoma / Speed 1.
  12. Remove water from the bowl.
  13. Transfer steamed cauliflower to the Thermomix bowl. Add almond milk, salt, and pepper. Blend for 20 seconds / Speed 5 until smooth.
  14. Assemble and Bake:
  15. Preheat oven to 180°C. Grease an oven-proof dish with oil.
  16. Spoon the mince mixture into the dish. Top with cauliflower mash.
  17. Sprinkle grated Parmesan cheese over the top.
  18. Bake for 20 minutes or until the top is slightly crispy.
  19. Serve:
  20. Garnish with salad greens and enjoy!

Serves 4 - 7grammes of carb per serve
