Mexican Chicken
- 1 onion
- 3 cloves garlic
- 1 centimetre Peeled ginger
- 1 tablespoon dried chilli flakes to taste
- 1 tablespoon oil
- 700 grams chicken tenderloins
- 400 grams tinned tomatos
- 1 tablespoon tomato paste
- 2 tablespoons YIAH Fajita spice mix to taste, (Or taco seasoning or similar)
- 1 tablespoon Vege stock paste

This was banging with flavour! I just left the chilli flakes out so the kids could eat it and shredded the chicken when done. Great recipe.
We served this with tomato and cucumber salsa on rice. Thanks for the recipe!!!
Easy and yummy dish for tacos or any Mexican meal but if cooking for children go light on the chilli flakes. I used just 1 teaspoon and that was still too spicey for my six year old. One tablespoon of flakes would make it pretty hot!
We loved this recipe, I used it as a thick soup when I was not well so good!!

Yum, I used chicken thighs instead. I cooked with the MC in for 19 minutes, then another 19 minutes without to ensure they were tender.
We ate this with rice, tomato, cheese and sour cream, using a lettuce leaf like a taco shell.
