Ingredients
Mum's Curried Chicken
- 800 g chicken, thighs or breast fillets
- 1 onion, cut in half and sliced
- 2 cloves garlic
- 1 red chilli, deseeded
- 2 cm piece of ginger
- 1 red capsicum
- 1 lemon zest
- 20 g sesame oil
- 5 g curry powder
- 1 level tbsp chicken stock or a cube
- 60 g crunchy peanut butter
- 40 g Sweet chilli sauce
- 15 g soy sauce
- 400 g coconut cream
- 250 g baby spinach leave
- 1 hand full of cashew nuts for garnish

- Dice chicken in 3cm cubes and put aside. Cut onion in half, slice and put aside. Slice red capsicum and set aside.
Place garlic, deseeded chilli, lemon zest and ginger into TM bowl and chop 3 sec/speed 7, scrape sides down and chop again if needed.
Add onion, capsicum, curry powder and oil to TM bowl and sautee
3 mins/120 degrees C/"Counter-clockwise operation" /speed 1 without the MC in.
Add peanut butter, sweet chilli sauce and soy sauce, cook for
2 mins/ 120 degrees C/ "Counter-clockwise operation" /speed 1.
Scrape down sides of bowl and add coconut cream and chicken.
Cook for 15 mins/ 100 degree C/"Counter-clockwise operation" /speed .
Put baby spinach in thermo server and pour cooked chicken and leave for 5 minutes, then stir gently.
Garnish with cashew nuts

Tip
If I have left over roasted sweet potato I will add this to the curry.
Also a nice curry with sausages but my family likes the sausages cooked in the frying pan so after I have added the coconut cream I cook the curry for 7 mins instead of 15 mins and put cooked sausages in the thermo server and pour the curry sauce over the top.

This recipe was so easy to make and deliciously tasty! I omitted the chilli as the sweet chilli sauce provided enough spice for me and the kids. Have made it 2 times now and will become a regular meal for our house.

A new favourite for our family. Second time making it I cheated and peeled the
lemon. I put in extra ginger too. Added chicken stock with peanut butter. I made 2 batches and it fed around 16 people with rice! Everyone loved it.

I made this today nad found it quite tasty but needed more oomph, I would make it again but would keep the chilli seeds and not zest the lemon before putting it in. If I was introducing curry to kids, this is the one I would use. Many thanks for posting,

I just made this recipe with some leftover steamed chicken and the result was delicious. I added the chicken with the coconut cream and used speed 1...adjusted the cooking time to 7 minutes and added the baby spinach for the last minute. Thanks for a great recipe 😊
Really delicious, so many flavours. Just wondering if you use the zest of a whole lemon or just a strip of zest? Also, when do you add the stock? I nearly forgot to add it as it's not mentioned in the method. Thanks for sharing a great recipe. Yum
