Ingredients
Pork Rissoles (from left over roast meat)
- --- left over roast pork meat, chopped into pieces
- 1 handful fresh breadcrumbs, (Blitz 2-3 slices of frozen bread Speed 9 for 8-10 seconds - I use gluten free bread)
- 2 spring onions or shallots
- 1 clove garlic
- 1/2 cup stuffing mix, (or extra breadcrumbs with veg stock and herbs if gluten free)
- dash Worcestershire sauce
- dash soy sauce
- 2 dashes plum sauce
- 2 dashes honey soy BBQ sauce
- 2 heaped tablespoons tomato relish
- 1-2 eggs

- 4. Add rest of ingredients and mix 5 seconds speed 2. Shape into rissoles and shallow fry for 5-10 minutes
1. Make fresh breadcrumbs from 2 slices frozen bread in pieces on Speed 9 for 9-10 seconds. Set aside.
2. Chop spring onions and garlic for 2-3 seconds speed 7 and saute 2 mins 100*C speed1
3. Add chopped meat to TMX and mince 10 seconds speed 7
Tip
I made these gluten free (leaving out stuffing mix - by adding extra breadcrumbs and a little vegetable stock concentrate dissolved in a little water to give extra flavour.

Great Leftovers Recipe!
it's good to see more and more recipes being added using leftover roast meats.
This was an ideal recipe to use up all my leftover roast pork from earlier in the week. Being Winter, I served them with veggies but I think they would lend themselves better to a Summer salad.

We had quite a lot of turkey, ham and roast lamb left over this Christmas so I minced all the meat -in about 500gm batches, being a GF household I used a GF roll to make breadcrumbs and some vegetable stock paste dissolved in some water to replace the stuffing mix in the recipe. I used 2 eggs for binding the mince together (one just didn't seem enough) and just regular BBQ sauce. Enough to feed 2 families of six people. Such a great way to use up leftovers. I made 24 rissoles and a great thumbs up from both families.

This recipe was a godsend. We had so much food left over on Christmas Day and I didn't want to waste a thing. These were made from the left over pork roast along with the apricot and pistachio stuffing. Every bit was used and the result was sensational. Easy to freeze and pull out as many as you need whenever you need. Perfect served with some extra tomato relish to make them more moist. Sensational, thank you.

Try extra breadcrumbs with a few herbs - - see what you think or you could even leave it out I guess. Let me know how you go.
