Samoan Chop Sui
- 1 packages Vermicelli noodles
- 2 onions, Peeled and halved
- 15 cloves garlic, peeled
- 700g Beef Snitzel, 3cm pieces
- 400g Dark thick Soy Sauce, Sungold Brand is best
- 30g oil, Light Olive or Vegetable
- 50 gram fresh ginger, cut into pieces
- 50 gram fresh ginger, cut into pieces

- Place onions and garlic into the bowl (50 grams of fresh ginger if using)
Place lid and measuring cup - Chop 2 second - Speed 5
Scrape down sides of the bowl. - Add oil
Place lid and Steaming Basket on top of the lid
Cook 5 minutes - 120°C degree - "Counter-clockwise operation" Reverse Speed 2 - Add 200g dark thick soy sauce and Beef
Place lid, and steaming basket on top of the lid. - Cook 10 minutes - 120°C degrees - "Counter-clockwise operation" reverse speed 1
- Place steaming basket inside the bowl on top of the meat mixture, drain and discard half of the cooking liquid out.
Return bowl to base - Add 200g dark thick soy sauce, stir with spatula.
15 minutes - 100°C - "Counter-clockwise operation" reverse speed.
Leave to keep warm in the bowl.
- Drain the vermicelli noodles using the Varoma dish. Return to Thermoserver and cut with scissors thoroughly. - Transfer the cooked meat mixture to the vermicelli noodles. Mix to combine all ingredients.
Cover and keep warm while making boiled short grain white rice to serve with the chop sui.
Place Vermicelli noodles into a large Thermoserver and cover with boiling water. Leave to soak while cooking rest of the dish.
Tip
Chicken thighs or lamb can be used instead of beef.
Add 5cm piece of peeled fresh ginger if preferred.
