Satay Chicken
Prep
- 1 onion
- 1 Large carrot

- 1 level tbsp olive oil

- 1 level tbsp crushed ginger
- 1 level tbsp crushed garlic
Main
- 500 grams diced chicken thigh or breast
- 1 cup coconut milk, (use rest of can in rice)
- 1/3 cup peanut butter
- 1 heaped tablespoons honey
- 1 level tbsp soy sauce
- 1 level tbsp Babas Curry Powder
Final
- 1/2 head Broccoli, (small florets)
- 1 Capsicum, (small dice)
- 1 level tbsp cornflour, mixed with water to make a slurry

Change to stir assist
Add oil & cook for 6 mins 100' speed 1
Add garlic and ginger and cook for 1 min 100' speed 1
Add main ingredients & cook for 17 minutes 100' speed 1
Add broccoli, capsicum and cornflour slurry and cook for 3
minutes 100' speed 1.
Serve with rice and chopped peanuts/cashews/spring onion/chilli sauce or slices
