Ingredients
Dressing
- 10 g ginger, peeled
- 10 g coriander stem
- 1 long red chilli
- 3 cloves garlic, peeled
- 5 cm lemongrass
- 40 g rice wine vinegar
- 1 level tbsp palm sugar
- 40 g soy sauce
- 15 g sesame oil
- 40 g olive oil
- 10 g water
Vermicelli Salad
- 100 g Vermicelli noodles
- half cucumber, continental
- 100 g cherry tomatoes
- 4 spring onion
- 15 g fresh mint
- 15 g fresh coriander leaves
- Chopped peanuts
Beef Fillet
- 600 g beef fillet steak, 1 long piece

- Add ginger, coriander, chilli, garlic, lemongrass in the bowl.
- 5sec, Sp8. Scrape.
- 5sec, Sp8. Scrape.
- Add rice wine, palm sugar, soy sauce, sesame oil, olive oil, water.
- 3sec, Sp5.
- Pour boiling water over them until soft. Drain.
- Put into large bowl. Add half of the dressing and combine.
- Slice cucumber, cut cherry tomatoes in half, slice spring onions (green part), pick leaves off herbs. Add to the noodles. Combine.
- Place on a serving platter.
- Coat the beef in salt and pepper. Be generous.
- Heat a BBQ plate or grill to hot. Oil.
- Cook on high 6 mins each side. REST for 10 mins
- Slice and serve on top of the salad.
- Add remaining dressing and chopped peanuts.
- ENJOY
