Ingredients

Vindaroo

  • 500 g diced kangaroo
  • 1 teaspoon cumin seeds
  • 2 teaspoons chilli powder
  • 1/2 teaspoon tumeric powder
  • 1 tablespoon garam masala
  • 1 teaspoon Ground Coriander
  • 2 teaspoons black mustard seeds
  • 1 teaspoon cinnamon
  • 6-8 black peppercorns
  • 60 g vinegar
  • 2 centimetres fresh ginger, peeled
  • 6 cloves garlic
  • 1 large onion, peeled and halved
  • 30 g olive oil
  • 450 g can Chopped Tomatoes
  • Greek yoghurt, to serve
  • 2-3 sprigs coriander, to serve

Recipe's preparation

  1. Place all dry spices into mixing bowl and grind for 10 to 20 seconds on speed 9.

  2. Add fresh ginger and chop for 10 seconds on speed 6.  Add vinegar and mix for 5 seconds on speed 5.

  3. Put kangaroo into a bowl and cover with vinegar and spice mixture.  Leave to marinate for 15 minutes.

  4. Wash mixing bowl.  Add garlic and onion.  Chop for 3 seconds on speed 7.  

  5. Add oil and saute for 3 minutes at 120 degrees (TM31 Varoma temp) on speed 1, with MC off.

  6. Add kangaroo and marinade.  Saute for 5 minutes at 120 degrees (TM31 Varoma temp) on Counter-clockwise operation"Counter-clockwise operation" , Speed 0.5 with MC off.

  7. Add tomatoes and cook at 100 degrees, Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" for 30 minutes.  

  8. Garnish with coriander, serve with greek yoghurt and rice or naan bread.

I give all the credit to my daughter for this recipe.  She makes it frequently, and has kindly shared it with me so I can share it with you.

This recipe is also suitable for TM31 (that's what my daughter makes it in).

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
